Quick and Easy Brinjal in Oil -in Pressure cooker
Ingredients:
Tender, Small and round Brinjals-10 to12
Onions Medium-2
Oil-3 to4Tablesp
Tomato Medium-1,Chopped roughly
Red Chilli Powder-1 and 1/2Tsp
Ginger and garlic paste-1Tsp
Tamarind paste-1/2Tsp
Haldi-1/8Tsp
Jeera-1/2Tsp
Salt
Dhania Powder-1Tsp
Cloves-4
Cinnamon 1/4″pieces-2
Bay leaf-1
Chopped Coriander-1Tablesp
Pepper corns-5to6
METHOD:
1)Cut brinjals vertically into four keeping the stem intact.Keep them in water with a pinch of salt
2)Make paste of onions with tomato,dhania powder,Jeera powder, little coriander,1clove,1piece of cinnamon, red chilli Powder,haldi and ginger garlic paste. keep it aside
3)Heat a tablesp of oil in a pressure cooker(preferbly 3lits one).Add remaining cloves,cinnamon, pepper corns and bay leaf.Fry for few seconds
4)Add brinjals and fry for 2min and remove.Keep it aside
5)Add remaining oil and fry the prepared masala paste along with salt
6)Fry the masala paste till oil appears near the edges
7)Add brinjals,tamarind paste and 100ml of hot water
8)Cook for 2 whistles and remove the cooker from fire
9)Remove the lid after steam escapes . Garnish with chopped coriander.
10)Serve this delicious curry with any rice preparation/chapathi/poori
11)We usually serve this gravy curry with veg.pulav/non veg pulav along with onion raitha
Tip
1)Sprinkle a tablesp of (dry fried and powdered)white til powder and mix gently before serving
2)You can microhigh all the ingredients (for paste) for3 to4min before grinding.you can cut short the time for frying by this step
