Mamidi Thandra in MicroWave Oven

Mamidi Thandra(in Telugu)/Mango Jelly/Aam Papad

The routine method of preparing mamidi thandra or aam papad is drying the mango pulp under sun for 4 to5days.But this thandra can be prepared instantly in microwave oven

Ingredients:
Mango pulp- about 400gms collected from 3 to4 sweet and ripe

mangoes(Blend pulp in blender to get smooth paste)

Ghee-3Tsp

Corn flour paste-2Tsp+1Tsp of water

Sugar-125gms (or less)

Method:

1)Mix mango pulp,sugar and corn flour paste in a non stick pan.Cook it with 2tsp of ghee till the pulp reduces in quantity and becomes thick with bubbles.

2)Remove the pan from fire and keep it aside to cool

3)Grease a microwave safe rectangular tray with remaining tsp ghee(i used 1.2lts tray)

4)Dust it with some refind flour

5)Pour the thickened pulp into the tray and tap it to make it even with uniform thickness

6)Put the tray in microwave oven and microhigh for 3min. Again microwave under medium high for 4 to5min.Check once after 3min

7)Remove the tray from oven and check the dryness of jelly.Make cuts and turn the pieces

8)Again keep the tray in the oven and microwave under medium high for 4 to6 min.Check in between after every 2min for firmness of the jelly (with out being sticky)

9)If the jelly is still sticky keep it in the oven under medium high for another 1 to2min

10)Tip

Thickness of mango pulp should be uniform in the tray.If it is thin in some areas that area may get burnt while microwaving

Hence keep the thickness uniform and do not leave the oven during the procedure.
