Karivepaku pulihora (pulihora with curry patta leaves)
Curry patta leaves are rich in medicinal prperties and this is one of the tasty and healthy preparations with them.
Ingredients:
Curry patta leaves-2 cups-loosely packed
Cooked rice-3 cups
Tamarind paste-1tablesp
channa dal-2 tablesp
Urad dal-1tablesp
Dhania seeds-1tablesp
Hing-1/8tsp
Green chilli-4-chopped fine
Red chilli-4
Haldi-1/8tsp
Methi-a pinch
Oil-4 tablesp
Fried ground nuts-2 tablesp
Mustard seeds-1 tsp
Salt
Fried Cashew nuts-1tablesp
Method:
1)Dry fry the dhania seeds,jeera, methi seeds,dals till nice aroma comes.Remove and grind them into a course powder.keep it aside.
2)Heat 1 tablesp of oil add 2 red chillies and curry leaves .Fry till the leaves change colour and become little crispy.
3)Add the fried leaves to dal powder in mixie and grind into a fine powder .Keep it asde.
4)Heat remaining oil in a wide kadai,add hing,mustard seeds and remaining red chillies.Fry till mustard seeds crackle.Add green chillies,fry till they change colour
5)Add tamarind paste along with 2 tablesps of water along with haldi and salt.cook under low fire till raw smell disappears.
6)Add prepared curry leaf powder and let it cook for 2min.Remove from fire and add cooked rice .
7)Mix throughly with a flat rice spoon so that rice is completely coated with masala.
8)Garnish with nuts.
9)Serve this very tasty and healthy rice preparation with any raitha.
Tip:
Add a tablesp of oil to rice while cooking.This makes the rice fluffy and grains separate.
