Simple And Quick Vankaya Iguru.(Brinjal Curry)

A One Step Curry From Andhra.


Tender brinjal-300Gms.
Onion-2,medium,cut into small pieces.
Green chilli-one,cut into small pieces.
Red chilli powder-1/2tablesp.
Peeled and crushed garlic cloves:6to8.
Dhania powder-2tsp.

1).Cut brinjal Into 1 and 1/2 to 2″ cubes and put them in salted water to avoid discolouration.
2).Combine all the ingredients In a kadai along with drained brinjal pieces and 3tablesp Of water.
3).Cook covered under medium low heat till the brinjal is tender and oil is seen in the edges.Remove from fire(stir only once or twice)It will take 10 to 12 min approximately to cook.
4).This curry is very tasty and less spicy and can be quickly prepared.
5).serve this one step curry (or Iguru in telugu)with plain rice /curd rice as side dish.
Variation:Add a tablesp of coarse fried ground nut powder before removing from fire.mix and serve.
Tip:You can cook it in pressure cooker,but allow 2 whistles only.(preferably 2 or 3 lits. cooker).
