Easy Cucumber Fry.
Simple Andhra Side Dish.

Ingredients:

Cucumber-400Gms,Firm ,Yellow ,Round or oblong variety freely available in Andhra area.
Green Chillies-5,Cut vertically into thin slices.
Onions-2,Medium,sliced fine.
Red chilli powder-1/2tsp.
Haldi-a pinch.
Jeera-1/2tsp.
Curry leaves-6tO8nos.
White til-2tablesp,dry fried and powdered.
Salt.
Oil-2tablesp.
Peeled and crushed garlic-4 to 6 cloves.
Chopped coriander-2tSP.

Method:

1).Wash,peel and cut cucumber into thin slices.Keep them aside.
2).Heat oil,add jeera and curry leaves.Fry for 1/2min and add garlic ,onion and Chillies.Fry till onion turns pink.
3).Add haldi,cucumber pieces,chilli powder and salt.Mix well and keep the kadai covered.
4).Let it cook under low heat for 3to4min ,stirring in between twice.
5).No need to add water as there is lot of moisture content in cucumber.
6).Remove lid and fry the curry till dry.
7).Now sprinkle til powder and mix well.
8).Garnish with chopped coriander leaves.
9).This mildly spicy fry can be served as side dish along with sambar/curd rice.
