Sooji cupcake ( Microwave )

Ingredients:

1 cup – fine sooji/semolina
3 tblsp – desiccated Coconut powder
4 tblsp – butter/oil
1 cup – Milk
1/2 cup – fresh Curd
1 cup – Butter milk
3/4 cup – powdered Sugar
1/2 tsp – vanilla essence
1 tsp – baking soda
3 tbsp – small banana/fruit pulp
Cashew nuts

Method:

1Mix milk, sugar, butter milk, oil and fruit pulp. Beat well.
2 Add sooji, coconut powder and essence. Mix well and keep it aside for an hour.
3 Add baking soda to the cake batter and blend well.
4 Arrange paper cups in microwave safe cups.
5 Fill the cups with 3/4th full of batter and place a cashew at the top.
6 Arrange the cups on the turnable table and bake under high for 1-2 minutes (check after 1 minute and continue if necessary).
7 Serve with hot tea.
