Ingredients:
15 tbsp – bread crumbs, heaped
10 tbsp – plain flour, heaped
10 tbsp – sugar, powdered
8 tbsp – oil, sunflower oil
6 tbsp – fresh curds
6 tbsp – milk
6 drops – vanilla essence
2 tsp – baking powder
3/4tsp – baking soda
1 tbsp – tutti frutti
1 tbsp – cashew nut pieces,(dust with a pinch of maida)
2 tbsp – dessicated coconut powder
2 drops – orange food colour (optional)
Method:
1.Sieve maida, add coconut powder and bread crumbs, mix thoroughly and keep aside
2.Mix milk, powdered sugar, curd, oil, baking powder and baking soda and blend well
3.Keep aside for 2 to 3 min
4.Add maida mix, spoon by spoon to the above milk mix.
5.Stir continuously in one direction without forming lumps, use hand blender for better results)
6.Add essence, tutti frutti & food colour mix well
7.Pour the batter into a greased microwave safe tray
8.Spread cashew over the batter and bake on micro high for 3 min
9.Check once and bake again for 3 to 4 min (check oven temp)
10.Insert a knife to check if baking is complete
11.When it is done, cool and cut into pieces
