Ingredients:
200g – cucumber with yellow skin (curry variety)
Salt
1/2 tbsp – oil
4 – green chilli
1/2 tsp – jeera
4 – peeled garlic cloves
1/4 tsp – mustard seeds
1 tsp – tamarind paste
Method:
1.Peel cucumber, cut into half inch pieces, keep aside.
2.Prick the chillies with a needle.
3.Heat oil (1/4 tbsp), add cucumber pieces and fry for 3 min and remove.
4.In the same pan, add remaining oil, mustard seeds, jeera, garlic cloves.
5.Fry till seeds crackle, add green chilli, salt and fry for 2 min.
6.Remove from fire and grind this with tamarind paste and half the quantity of fried cucumber pieces into a coarse paste.
7.Add the remaining cucumber pieces and run mixer for a second before removing.
8.Serve this chutney with hot rice (of course with a spoonful of desi ghee).
9.You can add raw mustard paste instead of frying it.
