Moringa leaves / Munagaku pakoda with peanuts

Moringa leaves / Munagaku is very healthy green leafy vegetable with lot of nutritional benefits. This crispy snack is prepared with moringa leaves along with peanuts for extra crunch.
Ingredients:
Moringa leaves – 100 gms, ( Picked, washed and water drained, kept in a collander ),
Salt,
Raw peanuts – 50 gms,
Garam masala – 1/4 tsp,
Besan – 250 gms,
Rice flour – 3 tablesp,
grated ginger – 1 tsp,
Onion – 3 medium, sliced fine,
Green chilli – 6 to 8, chopped fine,
Ajwain – 1/4 tsp,
Baking soda – 2 pinch,
Chopped curry leaves – 1 tablesp,
Chopped coriander leaves – 1 tablesp,
Haldi – 2 big pinch,optional,
Peeled and crushed garlic – 6,
Oil to fry,
Method:
1).In a mixing bowl add 1 and 1/2 tablesp,of hot oil,all other ingredients except besan and rice flours. Gently mix the ingredients with clean hand. Donot add water now.
2).Now sprinkle both the flours and mix thoroughly with hand to prepare tight dough.usually there is no need to add water as the moisture present in the drained moringa leaves and onion is enough for preparing dough.If necessary sprinkle 1 or 2 tsp of water and proceed. Check salt.
3).Heat oil and using fingers, drop small portions into oil under medium flame. Fry till they turn light golden in colour. Remove the pakoda on to a kitchen tissue to absorb excess oil if any.
4).serve these delicious, healthy snack along with evening tea.
Tip:
a).As far as possible use tender moringa leaves. If the leaves are tender and small there is no need to chop. You can include moringa flowers also along with the leaves.
b).Diabetics can enjoy this snack in small portions.
