Borugula Thalimpu / Puffed Rice Snack
Borugula thalimpu is a light breakfast recipe and can easily be prepared along with vegetables
Ingredients:
Puffed Rice/borugulu (in telugu) – 250Gms
Onion – 1,medium,chopped fine
Green chillies – 4,chopped fine
Ginger – 1/2″ piece,chopped fine
PoTato – 1,medium, peeled and cut into small cubes
Fresh peas – 2 Tablesp
Carrot – 1,small,cut into small cubes
Tomato – 1,small ,seeds removed and chopped fine
Cashew nut bits – 2Tsp
Peanuts – 2Tsp
Mustard seeds – 1/4Tsp
Curry patta leaves – 6 to 8
Chopped coriander – 1Tablesp
oil – 2Tablesp
Juice of a small lemon
Salt
Method:
1).Quickly Wash puffed rice in colander to remove dust . Sqeeze out the water and Keep it aside
2).Heat oil,fry the nuts and remove.keep it aside
3).In the same pan add mustard seeds,curry leaves and fry till mustard splutters.Add onion,chillies,potato,peas, haldi,very little salt and ginger.Cook till onion becomes soft and the vegetables are tender
4).Add tomato pieces and cook till tomato becomes soft
5).Add puffed rice and mix thoroughly.cover for 2 min.
7).Remove lid ,mix once,add nuts and chopped coriander.Sprinkle some lime juice. Mix well and remove from fire.
8).This tasty snack can be served as breakfast or with evening tea.
