Brinjal Fry in Air fryer
This fry is called karam vankaya in telugu.Tastes best with curd rice.
Small (to medium) Tender Round Brinjals-6,
Red chilli powder- 1 Tsp
Dhania Powder-2 Tsp
Oil-1 and 1/2 Tsp
Fried Channa Dal Powder-1 Tablesp
Peeled and crushed Garlic Cloves- 3
Jeera Powder- 1/4 Tsp
1).Wash brinjals,cut them vertically into 4 parts, keeping the stem intact.Immerse them in salt water and keep them aside.
2).Mix all the powders into a soft paste using little water and 1 tsp of oil.
3).Stuff the brinjals with the above masala and smear the remaining oil over them.Keep them aside.
4).Preheat the air fryer at 200 degree C for 3 min.
5).Arrange the stuffed brinjals on the wire mesh and air fry them at 160 degree C for 15 min.Toss the brinjals gently 2 to 3 times during the procedure.If necessary keep them for 2 more min.
Cut the brinjals vertically into four pieces and smear the masala (add all the oil to the masala except few drops for greasing the tray)over them.Keep them on a greased alluminium plate ( or baking tray) and air fry them at 160 degree C for 10 to 12 min.
