Curry Patta Leaves Masala Bath

This rice preparation is very flavourful and tasty

Ingredients:

Curry Patta Leaves-1 cup-washed and dried on a clean cloth

channa dal-1 tablesp

urad dal 1 tablesp

Grated coconut/Dessicated coconut-3 tablesp

Jeera powder-1/2 tsp

Basmathi rice-2 cups,washed and soaked for 1/2hr,

Onions-Medium-2,sliced fine

Green chillies-2,sliced vertically

cloves-4, cardamom-2, cinnamon-1/2″pieces-2

Bay leaf-1

Potato-2-Medium,peeled and cut into 1″ cubes,keep them in water till use

Carrot-1-Medium,lightly scraped and cut into 1″cubes

Red chilli powder-1tsp

Haldi-1/8tsp

Salt

Ginger and garlic paste-2 tsp

Dhania powder-1 tsp

Garam masala-1 tsp

Fried cashew nuts-8to10(optional)

Oil-4 tablesp

Desi Ghee-2 tablesp

Method:

1)Heat a tablesp of oil in a pan and fry the curry leaves till crisp and dry,Remove and fry the dals till nice aroma comes.

2)Mix curry leaves,dals and coconut.Grind them into a coarse powder and keep it aside

3)Heat remaining oil in a cooker(preferbly 5 lits) add cloves cardamum,cinnamon and bay leaf.Fry them for few sec . Add green chili and onion and fry till onion turns pink and soft.

4)Add ginger garlic paste,fry till raw smell disappears.

5)Add dhania powder,chilli powder,jeera powder and haldi.Fry for 1/2min Add potato and carrot,cook for 2 min.

6)Add curry leaves masala powder,fry for a min.Add rice and fry for 2 min.

7)Add 4 and 1/2 cups of hot water along with salt.Mix well and cook for 3 whistles

8)Remove lid after steam escapes.sprinkle ghee over bath and mix gently .Close the lid till serving

9)Garnish with cashew nut halves and chopped coriander(optional).

10)Serve this flavourful ,healthy and tasty rice preparation for lunch along with any raitha and papadums.
