
Ingredients:
Tender brinjal – 300 gms,
Onion – 2 medium, chopped roughly,
Green chilli – 2, slit each into 2,
Ginger garlic paste – 3/4 tsp,
Tomato – 1, medium,cut into 4,
Dhania powder – 1 tablesp,
Jeera powder – 2 pinch,
Salt,
Oil – 3 tablesp,
Red chilli powder – 3/4 tsp,
Haldi – 1/4 tsp,
Cloves 2, cinnamon 1/4 inch pieces 2,
Bay leaf small – 1,
Method:
1).Wash brinjal, cut into large cubes.( 2 to 2 and 1/2 inch pieces ),keep them in water with a pinch of salt,
2).Heat a tsp of oil and fry the onion, tomato pieces till little soft.Grind it in a blender along with dhania powder, jeera powder, chilli powder, haldi, into a fine paste. Keep it aside,
3).Heat remaining oil in a cooker, add cloves, cinnamon, bay leaf, brinjal pieces with 2 pinch of salt and fry till brinjal just changes colour.Remove them on to a plate.
4).Now add green chilli, onion tomato paste, ginger garlic paste to the oil in the cooker and fry till raw smell goes. Add brinjal pieces along with little salt and 4 tablesp of water.Stir well.
4). Close the cooker and pressure cook the curry for 2 whistles. When the steam escapes,remove the lid , stir gently once and garnish with chopped coriander leaves.
5).Serve this simple brinjal onion masala with rice preparations like pulav, fried rice and chapathi, poori etc.
