Sambar powder – 1 Tablesp,
Methi seeds – 1 pinch,
Curry leaves – few,
Chopped coriander leaves – 1 Tablesp,
Tamarind paste – 2 tsp,
Jaggery powder – 1/2 tsp,
Method:
1).Wash toor dal and put it in cooker (I prefer 3 litres cooker ).Add haldi, chilli, chilli powder, methi seeds and tomato pieces.
2).Keep a steel container in the centre of the cooker.Keep the jack fruit seeds along with little water and salt. Now pour 150 to 200 m.l water over dal.
3).Close the cooker and pressure cook the contents for 4 whistles.
4).When cooker is cool, remove the lid. Take out the container (with jack fruit seeds )and keep it aside. Mash the dal, add 250 ml water along with tamarind paste. and keep it aside.
5).Heat oil in a kadai, add hing, mustard seeds, jeera, red chilli, garlic, curry leaves and fry till mustard splutters. Add onion, green chilli and fry till onion becomes soft.
5).Now pour the dal solution over the tadka and allow the sambar to cook for 3 more minutes under low flame. While it is boiling add sambar powder and jack fruit seeds. After 3 minutes check salt and consistancy of sambar. If it is thick you can add little more water and allow to cook for few seconds. Add little jaggery to balance the spiciness.
6).Sprinkle chopped coriander leaves and remove the kadai from flame.
7).Add a tsp of desi ghee to the sambar as last step to give lovely aroma.
8).Serve the tasty sambar with plain rice with little desi ghee and also break fast items like idli/ dosa/ pongal etc.
Tip:
If sambar powder is not available, you can add a tablesp of dhania powder,1/4 tsp pepper powder, 2 pinch of roasted jeera powder.
