Crispy and healthy vada with cooked rice

This crispy vade is an instant snack recipe utilising the left over cooked rice. There are many recipes using cooked rice like dosa, idli, small dumplings (punugulu ),and most importantly different varieties of rice preparations like lemon rice, fried rice etc.
Ingredients:
Cooked rice/ left over rice – 2 cups,
Salt,
Onion – 1,medium, sliced fine,
Green chilli – 2,chopped fine,
Grated ginger – 1/2 inch,
Chopped curry leaves – 1 tsp,
Chopped coriander leaves – 1 Tablesp,
Jeera – 1/4 tsp,
Fine sago powder – 2 Tablesp,( sago dry fried and powdered fine ),
Curd – 2 Tablesp,
Rice flour – 1 Tablesp, (another Tablesp if necessary ).
Oil to fry,
Method:
1),Blend cooked rice with 2 tsp of water, curd and salt into a fine paste.Remove it into a mixing bowl.
2).Add all ingredients except sago powder, rice flour and oil. Mix well with clean hand.The dough may look a bit loose.No need to worry.
3).Add sago powder , rice flour and mix very well . Usually no water is needed as onion also releases water.. Keep it aside for 15 minutes.
4).After 15 minutes, check consistancy.If it looks loose sprinkle a tablesp of rice flour and mix well.
5).Make round vada ( like medu vada ) with moistened hands .Put a hole in the centre and drop them in medium low heat |oil .Fry both sides till light golden in colour.Remove them on to a kitchen tissue to absorb excess oil if any.
6).Serve them hot as snack / in break fast/ with lunch.
Tip:
a).My secret ingredient is fine sago powder.This gives nice outer crispy ness to vada.
b).Try to add fresh thick curd.
