Ragi balls / Ragi Sangati is very popular and favourite rice item in Rayalaseema region. This dish is a very healthy combination of rice and ragi flour / finger millet flour advised for diabetics also in place of plain rice. Finger millet is low in fat , iron rich and has plenty of essential amino acids. Side dish for this yummy preparation is also important. Usually dal preparations and tangy pulusu type of side dish are prefered for vegetarians. For non vegetarians lamb / chicken gravies / kurma are the combinations.
Ingredients:
Ragi flour – 75 Gms,
Raw rice – 150 Gms, ( ration rice is preferable ).
Salt,
Ghee – 1 Tsp,
Method:
1).Wash and soak rice in water for 1/2 hr.
2).Drain and cook it with double the quantity of water with a tsp of ghee and salt.
3).Meanwhile mix ragi flour with 50 ml water and keep it ready.
4).When rice is almost soft ,add ragi solution to it. Stir continuously and quickly with wooden dal masher ( preferably ), gso that rice and ragi paste are well blended with out any lumps. Cover and cook for 2 minutes.
5).Remove the lid and make round dumplings with wet hands . Serve hot with any favourite side dish.
Tip:
You can use potato masher while mixing the flour and rice.
