Dudh vada with Sugar / Sugar free.

This is a simple recipe with minimum ingredients.These Vadas are very soft , healthy, and melt in mouth in no time.Famous sweet recipe in Northern India.
Ingredients:
Whole wheat flour – 1 Cup,
Sugar – 1 Cup,
Milk – 1 litre,
Cardamom powder – 1/4 Tsp,
Saffron – few strands,( optional ),
Ghee – 2 Tablesp,
Salt – A small pinch,
Nuts – almond and slivers, cashew nuts and few raisins ,
Oil to fry vada,
Water to make batter with wheat flour – 250 m.l.or little more,
Method:
1).Mix wheat flour , salt in water to prepare thin batter with out any lumps.Add melted ghee to the solution.Keep it aside.
2).Boil milk under low fire till it thickens to half of its original quantity.Add sugar and cook till it dissolves.Add saffron, cardamom powder, and nuts.Mix well and keep it aside.
2).Cook the batter on non stick pan, stirring continuously till it turns into a non sticky mass leaving the sides of pan .
3).Drop it on a plate to cool.Prepare small round tikkies with greased hands.
4).Fry them under medium low fire till light golden on both sides.
5).Place them on a plate.
6).when serving arrange vada on a plate and pour the thickend milk on them.
Tip:
Use sugar free powder sucralose in place of sugar.Diabetics and dieters can also enjoy this sweet in moderate servings.
