This chutney is very easy and quick to prepare with minimum oil.
Ingredients:
Tender brinjal -.200 Gms, ( preferably large purple vareity ),
Green chilli – 4,cut into two,
Red chilli – 2,
Tomato – Medium, 2, each cut into 4 pieces,
Onion – 1,medium,chopped roughly,
Jeera – 1/2 Tsp,
Hing – A pinch,
Salt,
Oil – 1 and 1/2 Tablesp,
Tamarind paste – 1 Tsp,
Channa Dal – 1 Tablesp,f
Urad Dal with out skin – 1 Tsp,
Mustard seeds – 1/4 Tsp,
Curry patta leaves – a sprig,
Peeled garlic – 5 to 6,
Chopped coriander leaves – 1 Tablesp,
Ground nut powder – 2 Tablesp,( nuts dry fried and powdered ),
Method:
1).Chop brinjal into big pieces . Combine brinjal, tomato, chilli and onion. along with little salt and just enough water to immerse the vegetables. Cook till brinjal turns just tender not mushy.
2).Drain the vegetables if there is any water and mash them into course paste with potato masher or dal laddle. Keep it aside.
3).Heat oil ,add hing, mustard seeds, jeera, red chilli and curry leaves.Fry till mustard splutters, add dals and crushed garlic and fry till dals change colour.
4).Add brinjal paste and tamarind .Mix well and cook the paste for 2 to 3 min till oil is seen near the edges.Check salt and add ground nut powder along with chopped coriander.mix well.Serve the chutney with hot plain rice with little ghee /break fast items like dosa/ upma etc.
5).These type of chutneys are more tastier if prepared in stone grinder and they are popularly called roti patchadi In Andhra.
Tip:
You can cook the brinjal etc in microwave oven under high power for 5 to 6 min.( Cut them into small pieces and microwave ).
