Spicy Fried rice with pigeon peas

This protein rich rice is prepared with pigeon peas / Fresh kandi ginjalu ( Telugu).These peas are available in plenty along with vaal beans during last ( nearly ) 4 months in a year in Andhra especially in Rayalaseema areas.We can prepare number of recipes with these healthy lentils.
Ingredients:
Pigeon peas / Kandi ginjalu – 125 Gms,
Basmathi Rice – 200 Gms,
Salt,
Red chilli powder – 1/2 Tsp,
Haldi – A pinch,
Onion ,medium 1- sliced fine,
Green chillies – 2,cut vertically into two,
Tomato,medium – 2,chopped fine,
Ginger garlic paste – 1 Tsp,
Cloves – 3,cinnamon – 1/2″ bits 2,cardamum – 2,
Bay leaf – 2,
Stone flower – very little,
Chopped coriander leaves – 2 Tablesp,
Ghee – 1 Tablesp,
Oil – 2 Tablesp,
Cashew nuts – 6 for garnishing,
Method:
1).Wash rice and soak it in water for 1/2.hr prair to cooking,
2).Heat oil along with ghee, add cloves, cardamom, cinnamon, bay leaf and stone flower. Fry for few seconds, add onion, chilli ,fry till onion becomes pink and soft. Add ginger garlic paste along with haldi.
3).Fry till raw smell disappears, add tomato pieces and cook till mushy. Add chilli powder and garam masala. Mix well.
4).Now add peas and cook for 2 to 3 minutes .Add drained rice along with 600 ml hot water. Add salt, mix well and pressure cook for 3 Whistles.
5).Remove from fire. After steam escapes remove the lid , gently mix and garnish with cashew and chopped coriander.
Serve hot with any raitha.
Tip:
If you desire you can add vegetables like carrot, potato etc. Check my gravy curry with these peas.
