Ingredients:
Toor dal – 200 Gms,
Brinjal – 2,medium,cut into small cubes,kept in water till use,
Onion – 1, medium,cut into small pieces,
Green chilli – 2, slit vertically into two
Tomato – 1,chopped fine,
Red chilli powder – 1/2 Tsp,
Haldi – 1/8 Tsp,
Salt,
Peeled and crushed garlic – 6,
Tamarind paste – 1Tsp,
Pappu Masala – 1 Tablesp,( If not available use 1 tsp of sambar powder ),
Curry patta leaves – A sprig,
Mustard seeds – 1/2 Tsp,
Hing – a pinch,
Jeera – 1/4 Tsp,
Oil – 2 Tablesp,
Method:
1).Wash and keep toor dal in a(3 litres preferably) pressure cooker with 400 mi.of water,tomato,green chilli, chilli powder, haldi and Pappu Masala.
2).Pressure cook the dal for three whistles.
3).Mash dal with back of laddle,and add tamarind paste.
4).In a separate pan, heat oil and add hing, mustard seeds, red chilli, jeera, garlic, curry leaves and fry for a min.Add onion and brinjal pieces along with little salt.
5).Cook till brinjal and onion become soft.Pour the dal over tadka with brinjal.Mix well and cook covered for 1 to 2 min.
6).Adjust salt and sprinkle chopped coriander leaves.Remove from fire and serve with hot plain rice/ chapathi/ Poori.
