Rice flour roti / Biyyam Pindi rotti

This Rotti / roti is very easy to prepare and tasty too.As they are prepared a little thickly, they are crispy outside and soft inside .A good breakfast dish.
Ingredients:
Rice flour – 200 Gms (preferably rice flour made from soaked ,dried,and ground rice),
Water – 350 ml,
Salt ,
Oil – 1 to 2 TSP for the dough,
Oil to cook the Rotti,
Jeera – 1/2 Tsp,
Green chilli. – 1,very finely chopped / 1/4 TSP chilli paste,
Method:
1).Heat water in a thick bottomed pan ,add chilli paste, jeera ,oil and salt.let it boil for a minute.Add rice flour and stir quickly so that all the dry flour is blended with water and forms a lump.
2).let it cool.Using hand knead the dough for 2 to 3 minutes to make it smooth.use little flour if needed.
3).Make 4 to 5 balls out of the dough .Pat the ball with oiled fingers and prepare a round roti of about 5″ diameter.
4).Cut the roti into neat round with the help of a round lid (of about 5″ diameter).Remove excess dough out side the lid (use to make another roti).
5).Cook the roti on a non stick tawa using little oil.Cook on both sides till light golden in colour.Remove on to a plate.
6).Serve the Rotti/ roti hot with ground nut chutney / coconut chutney.
Tip:
You can prepare all the the roti (with out cooking) and keep them in fridge for 6 to 8hrs till use.
