Microwave thotakoora thalimpu

Ingredients:

2 cups – thotakoora (amaranth leaves), chopped fine, include tender stems
Salt
8 – crushed garlic cloves (husk removed)
1/4 tsp – green chillies, chopped fine
1/4 tsp – red chilli (broken into pieces)
1/4 tsp – mustard seeds
1/4 tsp – cumin/jeera
2 tbsp – fried ground nut powder
2-3 tsp – oil
1 tbsp – chopped onion
turmeric powder/haldi, a pinch
8 – curry leaves

Method:

1.Put oil in a microsafe bowl, add mustard, jeera, red chilli, garlic, haldi and curry leaves.
2.Micro high for 2 min.
3.Add chopped chilli and onion, mix well and micro high for 2 min.
4.Add chopped greens, mix well on high for 6 min.
5.Stir once every 2 min (with lid for first 4 min).
6.Remove and sprinkle groundnut powder, mix well and allow standing time.
7.Serve with chapathi/poori/plain rice.
8.This is a very healthy side dish.
9.Very well suited for diabetics.
