Crunchy moong dal snack

This moong dal snack is crunchy not crispy because we are not deep frying the dal. It is a simple,evening tea time snack using minimum oil, moderately spicy and healthy too as it is protein rich.
Ingredients:
Split yellow moong dal with out skin – 200 gms,washed, soaked for 2 hrs,
Salt,
Peeled garlic cloves – 10, crushed lightly,
Red chilli – 4, broken into small pieces,
Jeera – 1 tsp,
Oil – 1 tablesp,
Mustard seeds – a pinch
Hing – a pinch,
Chopped curry leaves – 1 tsp,
Chopped coriander leaves – 2 tsp,
Fresh or desiccated coconut powder – 2 tsp,This is optional only,
Method:
1).Drain out the soaked water and boil the dal with 400 ml of fresh water with little salt for just 10 minutes. The dal should not be raw and also it should not be cooked soft. It should be just breakable and crunchy. Drain out the water and keep it aside. ( You can use the drained water in gravies ).
2).Heat oil in a frying pan, add mustard seeds, jeera, hing, chilli pieces, garlic, curry leaves and fry till mustard crackles and tadka gives nice aroma.
3).Drop the drained dal in to tadka, mix it very well and cover the pan for a minute.
4).Sprinkle coriander leaves,stir once and remove from fire.
Tip:
a).I do not prefer to add coconut,it is only optional.
b).Can be a good snack for diabetics, but in moderation.
