Protein rich crispy Moong sprouts vada

This protein rich vada is prepared with moong sprouts. Moong beans are full of health benefits.In this recipe we are using the beans after sprouting which enhances it’s benefits. Recipes with moong dal/ moong beans with or without husk are very healthy and tasty. They are loaded with good protein, fibre, good aminoacids and anti oxidants. Moong dal dosa / peasarattu is one of the famous break fast items in Andhra. Almost all hotels serve this popular break fast item. These dosa are served along with delicious upma and allam patchadi. We prepare number of recipes like dosa/ idli/ snacks like vada and sweets- halwa etc.
Ingredients:
Sprouted moong beans – 200 gms,( you can use 3 to 4 days sprouts, rinse gently once and keep it aside ),
Salt,
Onion – 2 medium, sliced fine,
Green chilli – 3, chopped fine,
Jeera – 1/4 tsp,
Grated ginger – 1 tsp,
Course powder of 2 cloves, 1/2 inch piece of cinnamon, 4 cloves of garlic and 1 tsp of dhania seeds,
Curry leaves – 2 tsp
Chopped coriander leaves – 2 tsp,
Method:
1).First make course paste of cloves, cinnamon, garlic, dhania seeds,and green chilli, salt in blender/ mixie.
2).Add the beans to mixie and blend using pulse, to get course paste. Remove the.paste into mixing bowl.
3).Add onion, jeera, chopped coriander and curry leaves. Mix very well. Check salt.
4).With wet fingers prepare round vada with a hole in the centre. Fry them in hot oil under low medium flame till they turn light golden in colour. Put them on kitchen tissue to absorb excess oil if any.
5).Serve these crispy snack along with a cup of tea or coffee.
