Ingredients:
Tender round brinjal – 200 gms,
Onion- 1 medium, chopped into small pieces,
Green chilli – 2,chopped fine,
Salt,
Red chilli powder – 1/4 tsp,
Haldi – 2 pinch,
Dhania powder – 1/2 tablesp,
Ginger garlic paste – 1/2 tsp,
Roasted jeera powder – 1/4 tsp,
Boiled potato – 1,medium,
Besan – 1 tablesp,
Corn flour – 3 tablesp,(prepare slurry with 3 tablesp of water,pinch of salt and 2 pinch of chilli powder),
Oil to shallow fry,
Method:
1).Cut brinjal into cubes and boil them in salted water till just tender. Mash and Keep it aside,
2).put the mashed brinjal, boiled potato, onion pieces, chilli, chilli powder,salt, ginger garlic paste, dhania powder, jeera powder, haldi, chopped coriander leaves and besan.Blend all the ingredients very well with out adding water. If necessary add little more besan to form dough.
3).Check salt and make small balls of the dough, keep them aside. Keep corn flour slurry ready.
3).Heat a nonstick kadai or frying pan with 2 tablesp of oil. Prepare small rounds with the dough, dip them in corn flour solution and arrange them in pan with out overlapping.
4).Shallow fry them on low flame on both sides.Once they are browned ,remove them on to a plate.
5).Serve them as appetizer/ snack/ side dish for rice preparations.
Tip:
You can add white of an egg to the corn flour slurry and use for coating.
