Dantu koora is nothing but one variety of Amaranthus greens- known as Amaranthus tricolour L.The leaves are very colourful and we can prepare fry / thalimpu/ dal/ snacks etc with these leaves.They are rich in minerals, vitamins ,antioxidants with high fibre content. Here iam giving recipe with tender stalks of dantu koora which is also fibre rich and nutricious.
Ingredients:
Tender stalks of dantu koora – 1 bundle,
Green chilli – 3, each slit vertically into 2,
Red chilli – 1,
Salt,
Red chilli powder – 1/2 tsp,
Haldi – 1/4 tsp,
Arbi/ chama gadda/ colocasia – 3, medium sized ,approximately 100 gms, ( washed,peeled and cut into 1 inch cubes, keep them aside ),
Onion – 1, medium, sliced fine,
Peeled and crushed garlic cloves – 6,
Methi seeds – a pinch,
Jeera powder – 2 pinch,
Dhania powder – 1 Tablesp,
Tamarind paste – 1 Tablesp, diluted in 300 to 350 ml.water.
Jaggery – 1 Tablesp,
Mustard seeds – 1/4 tsp,
Split urad dal – 1/4 tsp,
Channa dal – 1 tsp,
Curry leaves – few,
Hing,
chopped coriander leaves – 1 tablesp,
Oil – 3 tablesp,
Method:
1).Pick leaves from stalks and preserve them for preparing another delicious recipe. Wash, cut the stalks into 1 to 1 and 1/2 inches pieces after removing fibrous portion( while cutting) and keep them aside.
2).Heat oil in a kadai, add mustard, dals, hing, curry leaves, red chilli, methi seeds and fry for few seconds till dals change colour.
2).Add onion, green chilli, crushed garlic and fry till onion becomes pink. Add masala powders ,mix well and cook for 1 minute.
3).Add arbi, stalks pieces along with salt ,mix well and cook for 2 minutes covered with a lid. Remove the lid and pour the tamarind water and allow to cook till the stalks and arbi are tender. Lastly add jaggery powder, mix well and cook for a minute. Sprinkle chopped coriander leaves and remove from fire. Serve with hot plain rice preferably with gatti pappu along with little desi ghee.
Tip:
a).If you want the gravy to be a little thick ,you can add a tsp of rice flour diluted in little water and added to the gravy or a tablesp. Of toor dal water can also be added.
b).You can include tomato puree/ pieces while frying onion.
c).You can prepare this recipe in pressure cooker ( preferably 3 litres size ) with only 2 whistles.
