Lobia / alasanda / black eyed beans or dal is protein rich and we can prepare very tasty , crispy vada, idli, ( beans) sundal etc using this. This recipe dosa is very crispy and healthy, can be served with potato poratu / masala, peanut chutney or coconut chutney etc.
Ingredients:
Raw rice or dosa rice – 3 cups, ( washed 2to 3 times and soaked for 4 hrs ),
Methi – 2 pinch,
Lobia dal – 3/4 cup,( you can use whole beans or dal ),
Whole urad without skin – 2 Tablesp,( washed 2to 3 times, soaked with methi and lobia for 4 hrs),
Salt,
Baking soda – 2 pinch,
Oil to prepare dosa,
Method:
1).Blend the dal using the same water in which it is soaked ,to a very fine thick paste ,keep it aside.
2).Wash the rice once and blend it to a fine paste using small quantity of water in batches.
3).Mix both the batters with hand and keep it covered till morning for fermentation.
4).Next day take the required quantity of batter , add salt, baking soda and mix well.If necessary add little water to get dosa consistancy.
5).prepare dosa in the normal way using non stick or cast iron tawa using a cut onion to rub the pan if necessary.Prepare all dosa using the entire batter.
6).Serve with potato masala or any chutney.
Tip:
a).You can include the skin over the beans or dal. If there is lot of skin floating after soaking, you can remove it.Other wise actually it is healthy to include it. You can go through my other recipes using lobia. In this recipe I used dal as it is available in my place.
