Usually we consume the red portion of water melon and through away the outer peel. This delicious raitha is prepared with white rind part of water melon.We can also prepare tutti tutti with this.
Ingredients:
Grated white portion of water melon – 100 gms,
Fresh curd – 250 ml,
Onion – 1 medium,sliced fine,
Green chilli – 2,chopped fine,
Jeera – 1/8 tsp,
Jeera powder – 2 pinch, ( optional ),
Salt,
Oil – 2 tablesp,
Red chilli – 1,broken into 2,
Peeled and crushed garlic – 3,( optional ),
Curry leaves – few,
Mustard seeds – 1/4 tsp,
Urad dal and channa dal 1/4 tsp each,
Chopped coriander leaves – 2 tsp,
Hing – 2 pinch,
Method:
1).Carefully remove the green outer layer preserving the white portion of water melon. It is grated fine and keep it aside.
2).Heat oil in a kadai, add mustard seeds, dals, jeera,red chilli, curry leaves, garlic and hing. Fry for few seconds till dals change colour. Add onion, green chili and fry till onion turns soft.
3).Add grated melon, salt and cook for a minute. Remove from fire add jeera powder,mix well and allow it to cool.
4).Whisk curd very well and add the melon mix. Check salt and sprinkle chopped coriander leaves.
5).Serve this fibre rich tasty raitha with rice preparations / chapathi/ poori etc.
Tip:
a).If you like crunchy gratings, there is no need to fry them ,you can directly add them to curd.
