Sandwich Bread in kadai



This bread is very soft, very fluffy and very tasty . I used the starter of Tangzhong method with miner changes.
Ingredients:
All purpose flour – 2 and 1/2 cups ( approximately 300 Gms ) + 3 tablesp for starter or paste/ roux
Unsalted / salted butter – 1 Tablesp,
Oil – 2 Tablesp,
Sugar – 2 Tablesp,
Salt,
Milk – 60 ml ,
Milk powder – 2 Tablesp,
Instant yeast – 1 and 1/4 Tsp,
Warm water – 1 cup,
Method:
1).Mix 3 tablesp of flour and 30 ml milk along with 30 ml of water. Cook it on low flame till soft sticky paste is formed. Keep it in a bowl covered .
1).Take seived flour in a mixing bowl, add salt, sugar, yeast, milk powder. Mix well and add remaining milk to the flour.
2).Start mixing the flour with milk and add the paste that is already prepared . Add water litle by little till you get sticky dough. ( If necessary use little more water ).
3).Put the dough on clean surface ,dust some flour and knead the dough for 5 minutes. While kneading sprinkle little oil to facilitate quick and easy kneading.
4).Now the stickiness of dough becomes minimum. Smear little oil on the dough ball and keep it in a mixing bowl covered with a cling wrap or lid. Let it rest for 2 hrs to raise.
5).After 2 hrs the dough raises to double it’s size. Punch it with knuckles to release trapped air.
6).Remove the dough on to kitchen surface and again knead it for a minute. Prepare a log with entire dough and Put it in a greased bread mould of medium size. ( Metal – preferably non stick ).Let it rest for 45 minutes in a warm place.
7).After 45 min. We can see that the dough doubled in size. Give it a milk wash and keep it on a stand in a preheated heavy bottomed kadai. Bake it for 30 to 45 minutes under low medium heat. Test with a tooth pick, if it comes out clean bread is ready.
8).Brush with little butter to give it a nice glaze and aroma. Keep it covered with a damp cloth for 10 min.
9).When it is cool cut it into slices and serve with jam or sauce. You can prepare no. of recipes using bread.
Tip:
I have thrown some white til on the bread to give extra taste. If you want to bake it in O.T.G. bake it under 180 degree C.for 25 to 30 minutes.
