Easy Puff pastry – Veg. Puff

Ingredients:
All purpose flour / maida – 2 cups , approximately 240 Gms,
Butter / dalda / lily – 100 Gms,
Salt,
Corn flour – 3 Tablesp,
For filling :
Oil – 1 Tablesp,
Potato – 2 medium, washed, boiled, peeled and mashed,
Green chillies – 1, chopped fine,
Garam masala – 1/4 Tsp,
Salt,
Haldi – 1/8 Tsp,
Ginger garlic paste – 1/4 Tsp,
Jeera – 2 pinches,
Red chilli powder – 1/4 Tsp,
Carrot gratings – 2 Tsp,
Chopped coriander – 2 Tsp,
Method:
1).preparation of filling: Heat oil ,saute jeera, onion, chillies till onion turns little soft.Add ginger garlic paste and fry till raw smell goes. Add carrot, fry for a minute, add haldi,salt and potato mash. Mix well and add garam masala and coriander leaves. Mix well and keep it for few seconds and remove from flame. Keep it aside.
2).Mix vanaspathi and corn flour.Prepare a smooth and creamy paste. Keep it aside.
2).Take all purpose flour into a mixing bowl. Add salt, 2 tsp of melted dalda and prepare a smooth dough using chilled water little by little. Knead it for 5 minutes and keep it for 15 to 20 minutes under a damp cloth.
3).After 20 minutes, again knead the dough for a minute . Spread some flour on work place and make a thin round . Smear the cornflour paste evenly all over the round including edges. Sprinkle little flour on the sheet and gently smear it. Fold it from all the sides like an envelope.
4).Prepare a thin rectangle now, again smear the corn flour paste. Again fold it like an envelope. This is to be repeated thrice.
5).Now the pastry sheet is ready.
6).Cut the sheet into 8 small rectangles .Put a tablesp of filling towards one end of rectangle and cover with the upper end .Press a little so that filling does not come out.
7).Make all the puffs in the same way . Arrange them on greased baking tray and give milk wash. Bake them in pre heated oven for 15 minutes at 180 degree C.If necessary continue baking for another 2 to 3 minutes.
Tip:
If you want to preserve the sheet for later use, keep it in an air ight container in freezer. But better use it within 10 to 15 days.
