This simple side dish majjiga pulusu / menthi majjiga ( in Telugu) / Kadhi is a quick preparation with readily available ingredients in our kitchen. In this preparation healthy curry leaves paste is added to enhance its flavor and taste.
Ingredients:
Fresh curds – 1 cup, blend and add 500 m.l.water to make butter milk,
Salt,
Channa Dal – 1 Tablespoon,
Dhania – 1 Tablespoon,
Jeera – 1 Tsp,
Dessicated coconut powder – 2 Tablespoon, ( can be substituted with fresh coconut gratings if available ),
Ginger – 1/2″ piece,
Green chilli – 4 + 2,slit vertically into two,
Curry leaves – 10 to 12,
Haldi – 2 pinches,
Onion – 1 medium, sliced fine,
Vegetables like brinjal, bottle gourd, bhendi, etc ( You can use any vegetable you like, including peas), about 125 Gms.
Chopped coriander – 1 Tablesp,
Oil – 1 Tablesp,
Methi – 1/4 Tsp,
Red chilli – 1,
Method:
1).Boil the vegetable cubes / pieces with little salt and keep them aside,.
2).Dry fry Channa Dal, dhania ,jeera, 4 green chilli, ginger, coconut powder lastly curry leaves one by one and grind them into fine course powder or paste.
3).Heat oil in a kadai add mustard seeds, methi seeds and red chilli, Fry till mustard crackles. Add onion, remaining chilli and fry Iill onion turns pink.
4).Mix ground powder / paste in 50 m.l butter milk / water. Add this to onions.Let it boil for a min.
5).Add boiled vegetables ,Salt and haldi. Let it cook for 2 minutes.
6).Add well blended butter milk, mix well and stir continuously till it just starts boiling. Remove immeadiatly. Garnish with chopped coriander. Serve as side dish for rice.
Tip:
Remove the kadai immeadiatly once the mixture starts to boil other wise the mixture splits and losts creamy texture.
