These crispy and healthy biscuits are prepared using sugar free powder ( Sucralose) in place of sugar. Hence can be enjoyed by diabetics and also dieters ( of course in moderate portions ).
Ingredients:
All purpose flour / maida – 1 Cup,
Sugar free powder ( Sucralose) – 4 Spoons ( measuring spoon provided with sugar free powder pack ),
Dessicated coconut powder – 3 Tablespoons + 1 Tablespoon for coating,
Baking powder – 3/4 Tsp,
Cooking oil – 2 Tablespoons,
Vanilla essence – 1/4 Tsp,
Butter ,melted – 2 Tablesp, ( I used Amullite which is a healthier option for butter).
Milk as per requirement for preparing dough.
Method:
1).Mix butter, oil, sugar free powder in a mixing bowl. Blend them well till the mixture is smooth and creamy.
2).Seive flour and baking powder into wet mixture. Add coconut powder and vanilla essence . Mix the ingredients with hand to prepare smooth dough.Little milk can be added while preparing dough. Let it rest for 10 Min.
3).Mean while pre heat the pressure pan with a small stand in the centre ( with out gasket and weight).
4).Prepare a thick rectangle and cut this into rounds with the help of a bottle lid. Roll them in coconut powder. Arrange them on a greased plate or tray and bake them in pre heated pressure pan for 10 to 12 minutes under medium flame. .If necessary continue for 2 more minutes.
Tip:
a).I used pressure pan because it is wide and we can bake all biscuits in one go with out any problem.
b).Increase or decrease sucralose as per your requirement.
