This yummy sweet snack is very easy to prepare. It is a sweet made mainly with rice flour or wheat flour or combination of rice flour and maida . This pitha is a famous sweet from Assam, west Bengal, northesteren region of India .It is popular sweet in Bangladesh and Nepal also .Sometimes pitha is filled with spicy vegetable preparation Here Iam giving sweet version.
Ingredients:
All purpose flour – 50 Gms,
Rice flour – 100 Gms,
Fresh coconut gratings – 5 Tablespoons,
White til – 2 Tablespoons,
Powdered sugar – 4 Tablespoons,
Cardamom powder – 1/4 Tsp,
Almond slivers and melon seeds – 2 Tsp each, ( optional).,
Milk as per requirement to prepare batter.
Desi ghee / butter – 3 Tablespoons,
Oil to prepare pitha,
Method:
1).Dry fry til lightly and keep it aside.
1).Prepare batter of dosa consistency by mixing maida, rice flour, milk and a pinch of cardamom powder.
2). Mix sugar, coconut, til and cardamom powder along with nuts. Keep the filling aside .
3).Heat a non stick pan and smear little oil. Pour a small ladleful of batter on pan and spread it thinly. Drizzle some oil on pitha and fry the pitha on both sides till light golden .
4). Put 2 tsp of filling in the centre of pitha and fold it. Sprinkle little filling on pitha along with little ghee and serve as dessert.
Tip:
Some people prepare them as rolls.
