In this cup cake , ragi flour / finger millet flour / nachni flour is included as one of the ingredients. Ragi or nachni flour is healthy cereal rich in iron and lot of beneficial nutrients.
Ingredients:
All purpose flour / maida – 1cup,
Ragi flour – 1/4 cup,
Powdered sugar – 3/4 cup,
Baking powder – 1 Tsp,
Baking soda – 1/2 Tsp,
Vanilla essence – 1/2 Tsp,
Vinegar – 1/2 Tsp,
Curd – 1/4 Cup,
Tutti fruiti – 3 Tablespoons,
Oil – 4 Tablespoons,
Milk – 1/4 cup,
Measuring cups,
Method:
1).Mix wet ingredients oil,curd and milk in a mixing bowl. Mix all very well preferably with a blender.
2).Seive maida, nachni flour, baking soda, baking powder into the mixing bowl with wet ingredients. Mix well till no lumps are seen.
3).Add more milk if necessary. Add vanilla essence, 2 Tablespoons of tutti fruiti and lastly vinegar. Blend well.
4).preheat oven at 180 degree C. Pour the cake batter up to 3/4 th in paper cups arranged in cup cake tray . Garnish with some tutti fruiti and bake at 180 degree C for 8 to 10 minutes.
