This simple and quick cabbage curry is prepared with minimum oil in pressure cooker- 2 tsp oil ,2 whistles in 2/ 3 litres pressure cooker.
Ingredients:,
Healthy cabbage head – 1, about 250 Gms, washed and grated fine,
Onion – 1, medium, sliced fine,
Green chilli – 3, chopped fine,
Jeera – 1/4 Tsp,
Mustard seeds – 1/4 Tsp,
Split urad Dal with out skin – 1/4 Tsp
Curry leaves – A small sprig,
Peeled garlic – 4, crushed,
Hing – A pinch ( optional),
Red chilli _ 1,
Chopped Coriander leaves – 1Tablesp,
Salt,
Oil – 2 Tsp
Method:
1).Heat oil in a pressure cooker ,add hing, mustard seeds, urad dal, red chilli, jeera, garlic, and curry leaves.Fry till mustard splutters.
2).Add onion and green chilli pieces.Fry till onion turns pink and soft.
3).Add grated cabbage along with salt and 3 tablesp.of water.Mix well.
4).Pressure cook for 2 whistles and remove cooker from fire. Remove lid when steam escapes, sprinkle chopped coriander leaves.If there is any water remaining at the bottom of cooker let it be on fire for one more minute till dry.
5).Serve it as side dish for plain rice/ rice preparations.
Tip:
A).For variation you can garnish with fresh coconut gratings.
B).You can use this curry as a stsuffing for chapathi/ Samosas.
