Gulab jamun with Sweet potato

This sweet – gulab jamun is prepared using sweet potato instead of mawa . Sweet potato is called chilagada dumpa in Telugu.
Ingredients
Sweet potato dough – 100 Gms, washed, boiled , peeled and mashed,
All purpose flour / Maida – 2 Tablesp,
Milk powder – 4 Tablesp,
Cardamom powder – 1/4 Tsp,
Sugar – 125 Gms,
Pistachio / almond slivers – 1/2 Tablesp for garnishing,
A pinch of baking soda,
Oil to deep fry,
Saffron – few strands ( optional ),
Method:
1).Make sugar syrup as for gulab Jamun by adding about 50 ml water. Let the sugar dissolve completely. Add cardamom powder and keep it aside. Add saffron strands if using.
2).Add maida ,soda, and milk powder to mashed sweet potato dough. Mix very well so that there will not be any lumps. The dough should be smooth .If necessary add a little more maida.
3).Make small rounds (or oblong shaped ) and fry them under low medium heat till they turn golden brown on all sides. Remove them and drop them in the prepared warm sugar syrup. Keep them for an hour so that the Jamuns absorb sugar syrup and become soft.
4).Serve them with garnishing .
Tipdr:
If necessary remove fibres from sweet potato mash through strainer.
