Mosumbi pulpy Jam

This is a simple and easy preparation with sweet limes/ Batthayi (in Telugu )/ mosumbi/sathkudi.
Ingredients:
Mosumbi fruits – 8 to 10 medium size,
Sugar – 250 Gms,
Desi ghee – 1 Tablesp,
Yellow food colour – 4 Drops, optional,
Method:
1).Peel the fruits and collect the pearl like pulp into a bowl.Remove the fibrous portions and seeds.Keep it aside.
2).Make one string sugar syrup with sugar and 1/4th cup water.
3).Add the pulp and cook under low fire .Add a tablespoon of desi ghee and stir continuously till it forms a sticky mass leaving the sides of pan.
4).Add food colour during stirring (if using ).
5).Remove from fire, cool and preserve in a clean glass bottle. Serve as bread/ chapathi/ poori spread.
Tip:
Sometimes we can not consume mlosumbi fruits when they are sour. We usually prepare juice .But we can use them in preparing yummy and healthy jam like this.
