This pickle is prepared with small / star gooseberry.If prepared carefully it keeps good for 5 to 6 months in fridge.This pickle is more tastier than usual Amla / gooseberry pickle.This fruit is tiny in size and has got many medicinal properties.
Ingredients:
Chinna usiri kayalu / star gooseberry – 500 Gms,
Red chilli powder – 125 Gms,
Red chillies – 5,
Haldi – 2Tsp,
Hing – 1/4 Tsp,
Salt – 125 Gms,
Oil – 150 ml,
Mustard powder – 3 Tsp,dry fried and powdered,
Methi powder – 1 Tsp,dry fried and powdered.
Peeled garlic cloves – 8 to 10,
Limes – 3,medium,juice extracted and keep it ready,
Method:
1).wash gooseberry and pat dry them with clean kitchen towel.
2).Heat oil in a kadai,lightly fry them till just tender and changes colour.Remove them on to a plate and let them cool.
3).Remove kadai from fire and add mustard seeds, haldi, hing, garlic cloves and red chilli to the hot oil.Stir well so that the spices will lightly get fried.
4).Let the oil cool down completely . Add methi powder, mustard powder and red chilli powder along with lime juice.Mix well and add the fried gooseberry to the spice mix.
5).Mix well so that the fruit is well coated with the masala.Check salt and spicyness.
6).Preserve the pickle in a clean glass bottle and keep it in fridge.Keeps good for 5 to 6 months. By keeping in fridge the attractive red colour of the pickle can also be retained.
