This simple delicious and healthy sweet snack is prepared with minimum ingredients.This is a lesser known sweet in Andhra area.It is a popular sweet prepared by Tamil Brahmins and it is called ukkarai..My mother used to prepare ukkiri / Ukkarai with basic dough of ariselu / adhirasam recipe.( I will upload my mother’s recipe soon).There are some variations in this preparation.
Ingredients:
Raw rice – 150 Gms,
Moong dal – 50 Gms,
Salt – A pinch,
Jaggery powder – 100 Gms,
Coconut gratings – 2 Tablesp,
Cashew bits, almond slivers, raisins – 2 Tsp each,
Ghee – 3 Tablesp,
Cardamum powder – 1/2 Tsp,
Method:
1).Dry fry moong dal till nice aroma appears and changes colour.Remove.
2).Dry fry rice till it just changes colour .Soak both in water for 2 hrs.
3).Fry nuts and raisins in a drop of ghee and keep aside.
4).Drain water and grind the rice mix into a course paste with a pinch of salt.
5).Steam the paste in idli cooker like idlis.Mash the idli into fine powder.
6).Prepare thick syrup with jaggery and little water.Add prepared powder, stir continuously adding ghee little by little till it is tharoughly cooked and well blended.
7).Add nuts ,raisins, coconut gratings, and cardamum powder.Mix well and serve warm.
Tip:
You can break the idli into bits and grind them into powder by using pulse 2 to 3 times.
