Amaranth stalks masala curry

This is a fibre rich ,healthy and nutritious masala curry prepared with tender stalks of amaranth greens (thotakoora in Telugu) with Channa dal.
Ingredients:
Tender amaranth stalks – 125 Gms,( pick leaves and preserve them to use in other preparations like Dals etc).
Onion – 1,medium,sliced fine,
Green chilli – 2 ,chopped fine,
Red chilli powder – 1/2 Tsp,
Haldi – 1/8 Tsp,
Salt,
Jeera – 1/2 Tsp,
Dhania powder – 2 Tsp,
Peeled garlic cloves – 6,
Channa dal – 2 Tablesp,soaked in water for 1/2 hr,
Oil – 2 Tablesp,
Chopped coriander leaves – 2 Tsp,
Dessicated coconut powder – 1 Tablesp,
Method:
1).Cut the amaranth stalks into 1/2″ pieces after removing the fibrous portions .Wash and keep them aside,
2).Dry fry the dhania seeds,jeera and garlic.Make a course powder in mixie and keep it aside,
3).Heat oil ,fry onion and chilli till onion turns pink ,
4).Add haldi,chilli powder, stalks along with Channa dal and salt.Mix well and add 75 ml of water .Cook underlow flame( with lid) till the stalks and Channa dal are tender .Add little water if nessessary.
5).Add the ground masala powder ,mix well and keep the kadai on fire for 2 more min.Sprinkle chopped coriander and coconut.
6).Remove and serve this healthy and tasty curry with rice/chapathi/poori.
Tip:
You can cut short the process of cooking by using pressure cooker.( Preferably 3 litres cooker). After adding stalks and Channa dal etc cook for 2 whistles.But reduce water to 2 to 3 tablesp only.After steam escapes add ground masala powder ,coconut powder and chopped coriander.Keep the cooker for a min on fire and remove.
