Ponnaganti Aaku koora vada
Ponnaganti Aaku koora (Telugu)is also called water amaranth.This aaku koora has got many medicinal properties.It is used in dal curries and also used as main ingredient in different variety of dishes.
This snack itom is prepared with above greens and chena dal
Ingredients:
Ponnaganti Aaku – About 2 handfuls of leaves
Chana Dal – 150 Gms
Urad Dal – 1Tablesp
Raw rice – 1Tsp
Onion – 1,Medium,Chopped fine
Green chillies – 6,chopped fine
Ginger – 1/2″piece,chopped fine
Dhania Seeds – 1Tsp
Sompu – A pinch
Coarse powder of 2 cloves and 1/2″ cinnamon
Method:
1).Greens washed,leaves picked from stems and chopped fine.Keep them aside
2).Soak dals and rice along with dhania seeds for 1 and 1/2 hr
3).Drain and grind the dals into a coarse paste .Remove the paste into a bowl.(do not add any water while grinding)
4).Add chopped greens,onion,chillies,ginger,sompu,clove cinnamon powder and salt.Mix thoroughly so that all ingredients are blended well
5).Make thin round vada and deep fry them till light golden in colour.Remove them on to a tissue paper to absorb excess oil if any
6).Serve these crispy,healthy and tasty aaku koora vada along with tea.
Tip:
If you want to avoid deep frying shallow fry them on non stick tawa using very little amount of oil.But blanch the leaves in hot water and add to the dal paste (to avoid raw smell and taste).
