Chana Dal and Amaranth Stalks Curry
This Spicy curry is prepared with chana dal and tender stalks/stems of amaranth leaves.Amaranth greens are called thotakura in telugu.
Ingredients:
Tender stalks of Amaranth leaves – 100Gms.(Amaranth leaves can be used in variety of dishes)
Chana Dal – 50Gms
Onion – Medium 1,chopped fine
Green Chilies – 2,chopped fine
Red Chilli Powder – 1Tsp
Haldi – A pinch
Garam Masala – 1/4Tsp
Salt
Dhania Seeds – 2Tsp
Jeera – 1/4Tsp
Fresh Coconut Gratings / Dessicated Coconut – 1Tablesp
Peeled and crushed garlic – 6
Oil – 2 Tablesp
Chopped Coriander – 1Tablesp
Method:
1).Remove tender stems of amaranth leaves and cut them into 1/4th” pieces .while cutting remove the fibrous threads from the stems.Keep them aside
2).Soak chana dal for 1/2hr.
3).Dry fry dhania along with jeera and prepare a course powder.Keep it aside
4).Heat oil ,add onion,chillies and garlic and suite for 2 min.till the onions turn soft and pink
5).Add chilli powder,haldi,dhania jeera powder.Stir once , add drained dal, stalks and salt.Pour 200 m.i. of water and Cook under low fire till dal and stalks become tender.
6).Add grated coconut and chopped coriander.mix well and remove from fire.
7).Serve this delicious curry with roti preparatios/rice preparations.This curry is healthy and tasty too.
Tip:
During the 2nd step cook dal,stalks and masalas in pressure cooker(preferably 3 lits cooker with only 50.m.l of water) for 2 to 3 whistles.If the curry is still watery let it be on fire for 2 more min.
