Pudina Puffed Rice
This is a very light snack recipe prepared with pudina masala and puffed rice/borugulu(Telugu)
Ingredients:
Puffed Rice-200Gms
Pudina and green chilli paste-1and 1/2Tablesp(with 2TO 3chillies)
Jeera Powder-1/2Tsp
Red Chillies-2,broken into pieces(0ptional)
Black salt-2 pinches
Garlic Paste-1Tsp
Haldi-1/8Tsp
Salt-a pinch
curry patta Leaves-Few
Fried Channa Dal-25Gms
Dry fried Ground Nuts-25Gms(husk removed)
Fried vaal dal-25Gms(optional)
Oil-2to 3Tablesp
Method:
1)Clean the puffed rice and keep aside
2)Heat oil,add curry leaves ,haldi and chillis.Fry for few seconds. Add a pinch of salt and all remaining masalas one by one and fry till raw smell goes
3)Add channa dal,ground nuts and vaal dal,fry for a min.
4)Add Puffed rice and stir the whole mix quickly and continously under low heat for a min.
5)Remove from fire ,let it cool for few seconds, mix every thing with hands (by rubbing gently with both the palms)so that all murmur grains are coated with mint masala
6)Again keep the kadai on fire ,stir for one more min and remove.
7)Cool and keep in an air tight container.Keeps crunchy for 1wk to 10days if it is kept in air tight container.
8)Selection of nuts is your choice.We Usually add the above nuts and dals
9)This is a quick and instant snack with very little oil.
Tip:
Use woke/large kadai for frying.
You can add a tsp of desi ghee for extra flavour and taste.
