Potato Kurma
Ingredients:
potato-300gms-Washed,peeled and cut into 1and 1/2to 2″cubes
Onion-Medium-3,
Green Chillies-5
Haldi- A pinch
Khus Khus/Poppy Seeds-1Tablesp
Dhania powder-1/2Tablesp
Jeera powder-1/2Tsp
Saunf/sompu-A pinch
Cashew nuts-6
Curds-3 Tablesp
Freshly grated coconut-2Tablesp
Salt
Oil-3Tablesp+1Tsp
Ginger and garlic paste-1/2Tsp
Chopped coriander leaves-1Tablesp
cloves-4,cinnamon-1/2″ pieces-2,Bay leaf-1
Method:
1)Finely Slice one onion and keep it aside
2)Roughly Chop remainig onions and fry them along with green chilli(prick chilli before frying) in 1tsp of oil till onion just turns light pink
3)Grind fried onion along with 2cloves,1/2″cinnamon,dhania powder,saunf and jeera powder into a smooth paste.keep it aside
4)Dry fry poppy seeds and cashew nuts and prepare a fine paste along with curds and coconut.Keep it aside.
5)Heat oil in a cooker(preferably 3 lits),add remaining cloves,bay leaf,cinnamon,fry for a sec. and add sliced onion.fry till it turns pink.Add ginger garlic paste and fry till raw smell goes.
6)Add onion paste,fry for 2 min under low heat.Add potato cubes along with salt and haldi.Mix well and add 300 ml of water
7)Put the lid , increase the heat and stop the cooker after 3 whistles
8)Remove the lid,add khus khus paste (mix 2to3tablesp of water to it if the gravy is thick)
9)Mix well and cook for 2 to3min.under low heat till the oil is seen at the edges
10)Remove from fire and sprinkle coriander
11)Serve this delicious kurma with pulov/any masala bath/chapathi/poori
