500gms – fine semolina
6-8 – green chillies (chopped very fine)
1 tsp – mustard seeds
3 tsp – split urad dal with out husk
1-inch – ginger piece, chopped very fine
8 – curry patta leaves, chopped fine
2 tsp – finely chopped coriander leaves
2 tbsp – cashew pieces
1 tbsp – oil
1/2 tsp – cumin
1.Dry fry rawa till it turns light brown, remove
2.In the same pan, heat 1 tsp oil add mustard seeds, cumin and dal.
3.Fry till dal becomes light golden in colour, remove.
4.Heat remaining oil add the remaining ingredients one by one.
5.Fry under sim till they almost become dry without any moisture (add the cashew last)
6.Now add rawa and fried dal to the above mix, stir once and remove.
7.Cool and store in an airtight container
8.Use as and when required.
9.Method for preparing rawa idli: Add salt, a pinch of soda bicarb, curd and a little water; keep for 15 min and prepare idli as usual.
10.Serve with groundnut chutney.
